We show the whole process, how each step is tailored into creating sushi.
And we like to give our guests details of and behind each 'neta' (the ingredients- usually seafood), so guests can enjoy the 'sound', 'scent', 'temperature', and 'umami', and the story flow from the first dish all the way to the last sushi, unfold like a well-structured story.
Edomae technique - letting the fish mature
The purpose is not to age - but to let the neta sit or mature for just the right time using Edomae technique, to bring out the perfect amount of umami.
The delicate yet bold umami of the neta, and the sweet fat of the neta that melts in your mouth.
We pride in our 'shari' (sushi rice) which is cooked in a 'hagama' (iron pot) and is composed of the perfect blend of red and white vinegar.
Also for each neta, there is a temperature at which umami and texture both are at the best - we'd like you to enjoy this finess, where maturing, the shari, and temperature all become as one.
Because we let the neta sit or mature, we are committed to the freshness of our ingredients
Ultimate freshness of ingredients is strictly an absolute must for Kadowaki, where ingredients are prepared with the Edomae-technique and left for a certain period to sit and mature, to bring out the umami.
In order to achieve the ultimate freshness of all ingredients, in addition to procuring from the fishmongers in Toyosu with whom we have a long trusted relationship, we fly down to all parts of Kyushu, Tsushima Island, and the Goto Islands etc to develop our own source. Ingredients carefully selected by our trusted local buyers there are processed by our ultimate blood-draining master of fish right away and sent directly to Kadowaki.

Nestled in a modern building in Ginza 7-chome on the 6th floor awaits Sushi Kadowaki.
After getting off the elevator, the moment you step foot through the sliding door, the peaceful soothing sound of 'tsukubai' (wash basin) welcomes you.
Then walking through the cobblestone alley warmly lit with dimmed lights, at the end appears a 'Sukiya-zukuri' ceiling and you are inside.
All relaxed seated at the white wood counter feeling the warmth of cypress, savour the exquisite time of sushi unfold in front of you with your choice of sake and wine from our abandunt selection.
